  3. Prepare green beans
  4. Take cherry tomatoes
  5. Prepare pine nuts
  6. Make ready Parmesan cheese (or dairy free/vegan alternative)
  7. Make ready Salt and pepper

I made the spiralised courgetti and pesto but you can always swap for supermarket options. Courgettes: Trim the ends, then use a potato. You can add more water if necessary to loosen. Making this dish not only vegetarian but nut free too.

Instructions to make Courgetti with pesto and green beans:
  1. Spiralise the courgettes. (Or use ready made courgetti)
  2. Make the pesto. (Or use bought instead). Please see my other recipes for how to make.
  3. Put the green beans and courgetti into separate pans, add boiling water and cook for 2-5 mins. You could cook together if the pan is big enough.
  4. One cooked, drain both together in a colander.
  5. Return to the pan (not on the heat) and stir in the pesto.
  6. Dish up onto plates and add tomatoes, pine nuts, salt and pepper to season and sprinkle with Parmesan cheese. Enjoy!

As well as our nutritious and vitamin laden pesto the trenette is served with potatoes, green beans & courgetti which is our modern take on a traditional pesto. Use a spiraliser to make long, thin courgette strands and add these to a bowl with the carrot and green beans. Add the cherry tomatoes, lime juice, tamari, palm sugar and chilli to a mortar and mix and bash together with a pestle. Pour over the courgette and mix well. Preparation: Prepare all ingredients as indicated above.
